V INEYARD DESCRIPTION
Vaca Vista Vineyard sits upon the valley floor in the Oak Knoll District and is our debut Cabernet Sauvignon vineyard in the appellation, set against a scenic backdrop of the Vaca Mountains to the east. The vineyard’s well-drained, gravelly soils and moderate climate provide even ripening, resulting in this structured and polished Cabernet Sauvignon.
HARVEST NOTES
The 2019 growing season began with late spring rains during flowering and fruit set. Cover crops between the vines flourished, putting rich nutrients into our soils. Our fruit set itself was lighter than
usual, resulting in exceptional concentration and retention of flavor and aromas in our clusters. Mild fall temperatures allowed fruit to mature fully, without being overly tannic nor overly ripe. 2019 was an excellent vintage overall that will continue to impress wine lovers and collectors for years to come.
SENSORY EVALUATION
Our third vintage of Vaca Vista Cabernet Sauvignon is brimming with expressive aromas of red currant, black cherry and tobacco leaf. On the palate, this is a classic Napa Cabernet with an herbal entry of sage and savory spices before migrating to a voluminous mix of red and dark fruit flavors. Soft and silky throughout the palate, this wine’s polished tannins and broad mouthfeel make this absolute
elegance in a glass from start to finish.
