Outside of Arizona and New Mexico border bars (where bottles had filtered over with immigrants from Sonora), LA’s Bar Ama, the new, Tex-Mexy restaurant by Baco Mercat chef Josef Centeno, was one of the first spots in the country to stock bacanora, so I thought I’d ask their bar manager, Brian Summers, for his take on the spirit. “I think it’s just really well-balanced,” he said, “the smoke isn’t as overpowering as, say, mezcal, and it has a really nice earthiness.” He compared many of the mezcals on the US market to Islay scotch, “big smoke bombs,” whereas bacanora would be more like a Campbeltown, or a smoke-inflected Highland.
