The Balvenie 12 Year Old Doublewood is one of their most popular creations. First launched in 1993 by the one and only David Stewart, this dram was quite the revolution back in the day, using the ’wood finishing’ process Stewart designed in 1982 – doublewood. So, what’s it all about? First, the brown stuff spends at least 12 years in traditional ex-Bourbon barrels, then, it’s moved to ex-Oloroso Sherry casks for another 9 months. Finally, individual casks are ”married” in large tuns for 3-4 months. Bottled at 80 proof on site, this beauty is soft and delicate but full of depth and flavor at the same time.
