Belgium is home to the most exceedingly sublime yeasts and I have elected two contrasting strains to craft this deeply complex yet subtly familiar cider. a farmhouse saison yeast from Hainaut and an exotci secret culture yielding notes of pineapple, mango and dried pear. Add a sprinkle of muscovado (aka evaporated cane juice), grown in Mauritius, and my most compelling creation is born.
Reverebd Nat is a single-minded cider evangelist who searches the world for superiour ingredients to handcraft the most unusual ciders that no one else will make. To my great joy, the world’s finest apples grow in my own back yard - the pacific northwest.
