Title:

Maker’s Mark Cellar Aged 2025

Description:
2025 release is a blend of older Maker’s Mark bourbons — 11-, 13-, and 14-year-old barrels. It spends time first in the traditional warehousing, then finishes in a LEED‑certified limestone cellar built into the natural limestone shelf at Star Hill Farm. That cellar gives cooler, more consistent temps, which helps reduce harsh oak tannins and bitterness in extended aging.
Long, smooth, with lingering oak, baking spices, sweet citrus note (zest), and a balanced richness — not too bitter, thanks in part to the cellar aging.
Even though it’s moderated by the cellar aging, this is still an age‑intensive, high‑proof bourbon. If you prefer lighter bourbons, or ones with very mild oak, this might feel a bit “rich” or assertive.
If you want the best of both (richness + depth + character + somewhat more restrained harshness), 2025 probably delivers the most balanced combo. It seems to build on what 2023 and 2024 did, pushes the dark / orchard fruit & fudge components, while tempering the extreme proof up front.
