Made in the northern highlands of Oaxaca where a sparesly inhabited sub-tropical climate produces some of the best sugar cane on earth. Third generation distiller Jose Luis Carrera works with several local varieties of cane grown organically and minimally processed during distillation using only the fresh, lightly pressed cane juice. A true expression of the quality of the cane and the character of the terroir notes here include a pungent green olive brine, wild herbs, fresh baked cornbread, pimento and dried figs. An incredible spirit worthy of any palate. The high proof makes it especially suited for cocktails.
