Kilchoman 100% Islay Sherry Cask Matured 11 Years Old

Kilchoman: Distillery sits amongst the traditional buildings of Rockside Farm on the north-west coast of Islay. Sheltered beneath the Choc Dubh headland, our barley fields stretch west to the shores of Machir Bay Established in 2005, the family run distillery was the first new distillery to be built on islay in over 124 years.

From our inception, the 100% Islay range, Islay’s only Single Farm Single Malt, was our reason for being; it represents the rebirth of farm distilling, where the responsibility for growing and malting barley, the foundation of single malt, is not outsourced but completed on site with skill, care and attention to detail.

The 100% Islay Sherry Cask Matured was distilled from our 2011, 2012, and 2013 barley harvests and matured for a minimum of 11 years in 16 ex-oloroso sherry butts. During maturation, layers of dried fruits and rich spices have infused into the whisky, which balance beautifully with the natural citrus sweetness and peat smoke of the Kilchoman spirit.
